Avo-Tomato Bagel

This is where it all began.

I'm so excited to share my first recipe with everyone!
I have almost no time to put into making a meal for myself. Unless it's for my son... Well behold! The most simple vegan recipe that's full of tangy flavor, and high in good fats! You're Welcome :)
To make your Avo-Tomato bagel, we will begin with toasting our bagel. I would go for a healthy Whole Wheat bagel such as Thomas's bagel. They are a good source of fiber, and protein, with no added fructose corn syrup. (Picture Below)

While the bagel is toasting, I like to go ahead and cut a ripe tomato into semi-thin slices, set them aside. Then we will cut open the avocado scooping out thin slices with the edge of a butter knife, and then lathering it onto the bagel. After you have used probably half of the avocado, you can now go ahead and lay the tomato slices on top of the avocado. To balance the flavors I use mustard, garlic powder, salt, and pepper. Another option for the topping could be fresh basil, sesame seeds, anything your heart desires really.
Simple, but tasty!
When people hear the word "Vegan" they might think 'complicated', but vegan recipes can be simple and made from everyday things we have in our kitchens. Creating this blog helps me to stay on track with not only eating vegan food, but staying on track with eating healthy. As a mother, things can get kind of crazy in life, and a average cookbook full of recipes and ingredients I don't have time to get can be overwhelming. We only get one life, and I want mine to be a healthy one for my son and I. I hope to continue to get creative in the kitchen (but not too creative) to inspire everyone who reads this to try a simple vegan recipe they might enjoy. Thank you for reading! Until next time.
